Enable EhCache statistics for the binaries cache by default

The default has changed to false. See the comment at the bottom of: http://ehcache.org/documentation/jmx.html

The performance impact mentioned is not an issue for the binaries cache.

Unfortunately, spring didn't catch up with this yet and doesn't provide a way to set the statistics flag.
