Include test classes in jars to be able to unit test HST2 components

In most projects developers want to test their HST components in isolation. Sometimes mocked objects are necessary. There are already some mocked objects available, but those do not end up in a maven artifact. This patch adds more mocked HST objects and creates test jars, so that the test classes are available inside the maven repository.
