Content Blocks Demo: add dropdown chooser and max items

The content blocks demo has only blocks definitions with buttons, not with the dropdown option. It would be nice if one of the documents shows that.

And then one of them could show off the maximum number of items, where you see that the add buttons disappear when the max is reached.

Also: there are a few places where a link to the documentation is shown. This link is outdated.
