Review and fix only required jcr protected properties handling, like retaining/applying jcr:uuid

In our WIP implementation, JCR protected properties, such as jcr:uuid, are ignored. UUID in particular has implications for successful round-tripping of content. Other properties may affect processing of nodes with/without override metadata.
