Migrate from Ehcache 2.x to Caffeine (refactor)

Ehcache 2 doesn’t support Jakarta. Ehcache 3 has backward incompatible changes that require code changes to support.
The choices, either fork ehcache2 (A fork by Firat is here) or migrate and adapt to the incompatible changes.

Forking adds several risks, one of them is the uncertainty of the amount of work needed for that, and the second is the disconnection from further upgrades and having to maintain the fork ourselves forever
