Update docs for run-jetty-run instead of jetty-launcher eclipse plugin

The jetty-launcher project seems quite stalled and the run-jetty-run project has taken over: http://code.google.com/p/run-jetty-run/

Furthermore the run-jetty-run plugin doesn't require a separate jetty download.
