Update categorization of channel properties

Archetype currently categorizes .../hst:workspace/hst:channel/hst:channelInfo/* as config. Since the channel lives in the hst:workspace, its settings can be edited in the channel manager, so these properties are really content, not config.

In order to mark them as content, we would need (at least) to support .meta:residual-property-category: content, which is not there yet, and optionally/preferably a more advanced mechanism for categorising nested properties (discussed separately).
